Red Pepper Bacon Jam

- 6 tablespoons MagicalButter
- 1½ pounds bacon, sliced
- 2 tablespoons clarified bacon fat
- 1 onion, diced
- 4 large garlic cloves, crushed and chopped
- 4 Fresno chili peppers, diced
- 2 red bell peppers, diced
- ½ cup chicken broth
- ½ cup sherry wine vinegar or apple cider
- ¼ cup brown sugar
- 2 tablespoons Dijon mustard
- 2 tablespoons maple syrup
- 2 teaspoons balsamic vinegar
- 1 tablespoon salt
- 1 teaspoon freshly ground pepper
- In a large sauté pan on medium-high heat, fry the bacon until it’s crispy. Then, place the bacon on paper towels, and discard all but 2 tablespoons of the bacon fat. Add the butter and bacon fat to the pan, and heat for 45-60 seconds.
