If you don’t like nutter butter cookies, you’re either lying or dead to me. Luckily, if you’re reading this recipe, it means you probably have more class than that. Nutter Butter has been a staple of the stoner experience since this 1973 commercial aired and creeped everybody out.
But if you want the best kind of nutter butter cookies, the special kind, you’ve got to make them yourself. Luckily, Herb has created a step-by-step video to walk you through the process.
Nutter Butter Cookies Recipe:
First, you’re going to want to prepare your cannabutter. This part can take some time, so plan ahead. Simply combine one pound of unsalted butter, one cup of water, and one ounce of ground marijuana together in a heated pan. If you don’t have a full ounce, figure out how much weed you do have and reduce the amount of water and butter you use accordingly (you have a calculator, figure it out).
Make sure you keep the heat low, so the butter and marijuana don’t burn. Simmer this mixture for 2-3 hours on low heat, making sure never to heat the pan enough to reach boiling point. After a few hours, put your newly minted cannabutter in the fridge to cool off and harden (it’s best to let it sit in the fridge overnight).
Next, you’re going to mix one cup of brown sugar with one stick of cannabutter (a quarter pound) in a large bowl and mix the two ingredients together rigorously for 5-7 minutes.
Then, crack one large egg, one tablespoon of vanilla bean paste and one cup of peanut butter into the bowl with the other two ingredients. Mix these ingredients thoroughly. Next, add some flour, baking soda and salt into the mixture—just enough so that the resulting mixture has the consistency of play-doh. Take this mixture and form little peanut-shaped cookies on a baking tray, then put them in the oven for 7-10 minutes at 350°F.
Pour one-and-a-half cups of powdered sugar into another large, clean bowl. Add to this four more tablespoons of cannabutter, two tablespoons of vanilla bean paste, one-half-cup of peanut butter and two tablespoons of heavy cream. Then, mix these ingredients together rigorously for 5-7 minutes. This will act as the filling for your nutter butter cookies.
The only thing left to do is spread the filling onto the baked cookies, placing a second cookie on top like an Oreo.
