Magical Gingerbread Cookies and Cupcakes

Gingerbread is a holiday classic. It’s warm, it’s sweet, and now—it’s lifted. Double your holiday fun with Magical Gingerbread Cookies and Cupcakes. These flavor-packed treats are perfect for sharing at your next adults-only party. Plus, they’re infused twice; both the frosting and the batter contain cannabis. For best results, make your butter ahead of time with your MagicalButter machine!

How To Make Magical Gingerbread Cookies & Cupcakes

Prep time: 30-45 m / Cook time: 12 to 20 m / Total time: 42-65 m

Grab your apron and pre-heat the oven. Each of these treats can take some time to prepare. But, hey—after a few tastes of this cannabis-infused gingerbread, a little work leads to hours of play.

Gingerbread Cookies 

  • 1/2 cup sugar 
  • 1/2 cup molasses 
  • 1/2 tsp ginger 
  • 1 tsp allspice 
  • 1 tsp cinnamon
  • 1 tsp cloves 
  • 1/2 cup MagicalButter 
  • 2 tsps baking soda 
  • 1 egg 
  • 3 1/2 cups flour 

Gingerbread Cupcakes 

  • 1 Box White Cake Mix 
  • 1 Box Pudding Mix 
  • 1 tsp ground ginger 
  • 1/2 tsp cinnamon 
  • 1/2 tsp allspice 
  • 3 eggs
  • 1/2 cup melted MagicalButter
  • 1 cup milk 
  • 1 tbsp vanilla extract 
  • 1/4 cup molasses 

Cream Cheese Frosting 

  • ½ stick of MagicalButter, softened 
  • 8 oz cream cheese, softened 
  • 4 cups powdered sugar 
  • 2 tsp vanilla extract

How To:

Gingerbread Cookies 

  1. In a small saucepot, mix together sugar, molasses, ginger, allspice, cinnamon, and cloves. Stir occasionally until your mixture begins to boil.
  2. Next, add one stick of MagicalButter and stir until melted. 
  3. After the butter has melted, add 2 teaspoons of baking soda. This will cause your mixture to foam (this is normal). Stir then transfer to a large mixing bowl. 
  4. Beat the egg in a separate bowl then add to foam mixture. Add flour and mix until is starts to form a dough. Remove dough from the mixing bowl and knead on a floured surface until completely mixed. 
  5. Divide dough in half and wrap one half in plastic wrap while you work on the other half. Roll the dough to about 1/4 inch thick. Cut out in your favorite holiday shapes and bake at 350 for 12 minutes.

Gingerbread Cupcakes 

  1. After pulling out Gingerbread cookies to cool, lower oven to 325°F. 
  2. Add your cupcakes liners to your cupcake tray. 
  3. Add the cake mix and pudding mix to a large bowl. Add the dry spices in and mix to combine. 
  4. Add the wet ingredients, then whisk to combine. 
  5. Once a smooth texture is reached and everything is incorporated, add 2 tablespoons of mix to each cupcake liner. Using a 1 tablespoon scoop will help you to accurately measure. 6. Bake at 325°F for 20 minutes. 

Cream Cheese Frosting 

  1. In a stand mixer combine the MagicalButter, cream cheese, and vanilla until it looks mixed. 
  2. Add in powdered sugar 1 cup at a time until incorporated. 
  3. Mix until creamy!
